Brazilian Black Bean Stew
Spicy, hearty and so so good. At least I thought so.
1/2 yellow onion, chopped
4 cloves garlic diced
1 1/2 cup water
4 fresh tomatoes, chopped ( or two cans diced)
1 jalapeno, diced
1 red bell pepper, chopped
2 yams, peeled, chopped
2 Mexican vegetarian sausages ( I used field roast) cut into rounds
2 cans black beans, drained and rinsed
1 mango peeled and chopped
1/4-1/2 cp cilantro.
Saute first two ingredients until onions are translucent. Then add everything to the sausages and let simmer 15-20 minutes or until yams are tender.
Stir in beans and cook until heated
Whoops I DID totally forget to mention I topped some basic Quinoa with this scrumptious stew.
