1 cup Quinoa, rinsed
1 5 oz can coconut oil
1 cup water
3 green onions sliced
1/2 red pepper, diced
2 cloves garlic, minced
1 tsp crushed red pepper
1/2 tsp salt
1/4 cup chopped cilantro
add everything but cilantro to a pot, bring to a boil, reduce heat to simmer and cover. Simmer 20 minutes. Remove from heat, let sit 10 minutes, stir in cilantro and serve hot.
I can honestly tell you I ate half of the pot! YUM
an item for thanksgiving feast perhaps? This looks good! I completely butchered an attempt at quinoa once and haven't tried cooking with it since. but this looks delic. i ADORE cilantro
