I just had to try another meatless burger, and since my audience included the usual Omni's and two new (My Dad and Step mom) I figured it couldn't be a better time!
My Peanut was being a wee bit fussy so excuse the not "magazine ready" photos
We topped these delicious burgers with Mango Salsa and Guacamole, served on whole wheat buns.
My parents told me I could "open your own veggie restaurant." Mind you my step momma is a wonderful cook, and my dad a very honest eater! I was thrilled!
My Omni? Well he's not that crazy about beans, but he said these were really good, and he thinks he likes them more than the Beet Burgers, but he wouldn't complain if I made either again.
Ingredients included ( I didn't really measure)
Black Beans
Yellow onion, diced
Red Bell Pepper, diced
Garlic, minced
1 Small Jalapeno, seeded and diced
Corn
Cumin
Chili Powder
Oregeno
Bread Crumbs
Parsley
Method:
Saute onion, peppers, garlic and oregano until onions are transparent.
Mash black beans in a bowl and combine all other ingredients.
Form into patties
Grill in a grill pan a few minutes each side.
Only things were A: I should have measured to make sure the burgers were big enough *smile* as you can see from the picture a few were rather small, and a few were perfect. B: the did fall apart a bit, perhaps I needed a touch more moisture. C: I need to make them again. YUM
This was my first experience being treated by my Baby-bear's cooking. The aroma as we entered the house told me this was going to be a treat. I was not disappointed! With cookin' like this...one could easily back off on the meat. (You'll notice I said back off...not give up. Can't quite go there, baby bear)
